Squirrely


OK, if you are squeamish, this may not be the blog for you. My kids are so proud to spend quality time with their daddy. Yesterday, he took Lauren and Michael squirrel hunting. We have an infestation of these cute creatures at our church. They are getting inside the building through the roof and causing all kinds of problems. Michael and Lauren were very eager to assist Eric in ridding Providence Baptist of squirrels. They only got four, but boy were they excited. Michael waited up for Eric to get home last night from a church visit to help clean the squirrels. Why are you cleaning them, you ask? My husband thought it would be interesting to cook the meat! I will not be partaking in this unusual redneck delicacy, but my son and husband cannot wait to try it! No thanks. You can tell by the looks on their faces that this was time well spent with their father. That's what's important....

The youth pastor at our previous church had a recipe for squirel stew. People would come over and rave about it, asking what kind of meat it. They were always surprised to find out. I guess it's pretty good stuff.

How exactly does one squirrel hunt? A gun? You should have said something while we were visiting. Molly is an expert squirrel hunter, much to my dismay.....

To answer Karen, Eric shot them with his .22 rifle...Next time you're here, Eric can take Molly with him!

Squirrel Stew

~ 3 squirrels, cleaned and cut up
~ 1/4 cup all purpose flour
~ 1 teaspoon salt
~ 1/2 teaspoon pepper
~ 2 slices bacon
~ 2 tablespoons butter
~ 5 cups of water
~ 1 - 28 oz can whole tomatoes
~ 1 chopped onion
~ 1 heaping tablespoon of brown sugar
~ 2 potatoes, peeled and cut into 1/2 inch cubes
~ 1 - 10 oz package frozen lima beans
~ 1 cup frozen corn
~ 3 tablespoons all purpose flour


Combine 1/4 cup flour, salt and pepper. Coat the squirrel pieces.

In a Dutch oven, combine bacon and butter over medium heat until butter melts. Add squirrel and brown.

Add water, tomatoes, onion and brown sugar and bring to boil. Reduce heat, cover and simmer for 1 1/2 to 2 hours, stirring occasionally.

Remove squirrel pieces and let cool. Remove meat from bones.

Add meat, potatoes, beans and corn to Dutch oven. Heat to boiling, reduce heat and cover. Simmer until potatoes are tender.

Mix 3 tablespoons of flour with 3 tablespoons of cold water, then stir into stew. Heat to boiling.

Cook over medium heat, stirring constantly, until thickened, bubbly.

Serve with warm rolls and enjoy!

I got a kick out of the comments about the "tree rats." Josh, thank you for the recipe (not normally something a guy writes about, but this is rednecky enough to be manly). Karen, Melissa said next time I can take Molly; I would be returning her. For those who might be agast at my shooting the little critters with a rifle, you should know the bullet is like a 1260fps/859mph tictac. Joey, the once accused kitten murderer has thoroughly enjoyed playing with the tails detached from the dispatched.
